My introduction to French-style chocolate mousse happened in a charming little bakery in New Orleans, and from that moment on, I was captivated. However, once I moved away from the city, the search for that light, velvety, and not overly sweet delight proved futile. Determined to fill the void in my life, I took matters into my own hands.

Step 1: In a small saucepan, melt chocolate chips with water; stir until smooth.

Step 2: Stir a small amount of hot chocolate mixture into egg yolk; return all to the pan, stirring constantly.

Step 3: Cook and stir for 2 minutes or until slightly thickened. Remove from the heat; stir in vanilla.

Step 4: Quickly transfer to a small bowl. Stir occasionally until completely cooled.

Step 5: In a small bowl, beat whipping cream until it begins to thicken. Add sugar; beat until soft peaks form.

Step 6: Fold into cooled chocolate mixture. Cover and refrigerate for at least 2 hours.

Step 7: If desired, garnish with whipped cream and raspberries.
