The herbs of Provence (or fennel seeds if you’re keeping it simple) give these patties that sophisticated touch that says, “Yes, I am a culinary genius.”

Oh, and did I mention these sausages are pan-fried to golden-brown perfection? Serve them alongside fluffy scrambled eggs, your favorite toast, or just savor them solo—you really can’t go wrong.

Equipment

  • 1 Mixing Bowl
  • 1 saute pan

Ingredients

  • 1 Granny Smith apple
  • 1 pound ground chicken
  • 1 TBSP minced garlic
  • 2 TBSP chopped green onions
  • 1 TSP salt
  • 1/2 TSP black pepper
  • 1/4 TSP crushed red pepper
  • 1/2 TSP herbs of Provence or just fennel seeds
  • Pinch of nutmeg
  • 2-3 TSP vegetable oil

Instructions

  • Grate the apple on the large holes of a box grater onto a cutting board; discard the core and stem. Gather the grated apple into a paper towel and carefully wring out the apple juice, while reserving the apple.
  • Add the ground turkey garlic, green onions, salt, pepper, herbs of Provence, crushed red pepper, and nutmeg to the bowl with the apple. Using your hands, gently mix to combine the sausage mixture. Shape into 8 balls and place on a parchment-lined baking sheet.
  • Heat 2 teaspoons of the oil in a large cast iron skillet over medium heat. Flatten 4 balls, each into a 3-inch wide patty and place in the preheated skillet. Cook the sausage patties until browned on both sides and cooked through, 6 to 8 minutes. Transfer to a plate and tent with foil to keep warm. Repeat with the remaining oil and sausage patties. Serve warm.
