This creation combines the delightful rice noodles reminiscent of Pad Thai and a luscious Thai peanut sauce, leaving my family’s taste buds in anticipation.

Simple Peanut Noodle bowl w/ chickpeas
Equipment
- 1 food processer
- 1 large bowl
- 1 knife with cutting board
Ingredients
- 8 oz Rice noodles
- 1/4 cup creamy peanut butter
- 2 TBSP fish oil
- juice from 2 limes
- 1 inch Fresh ginger peeled and sliced
- 1/2 English Cucumber slices thin
- 1 large carrot julienne
- 1 can chickpeas drained
- 2 cups snow peas
- 1 cup julienne basil
- 1 hot pepper sliced thin (optional for spice)
Instructions
- Take rice noodles and soak in boiling hot water for 10 minutes. Drain and rise with cold water. Place in large bowl
- Puree peanut butter, fish sauce, lime juice, ginger, 1/3 cup water. Blend till smooth. Pour the dressing over noodles and toss to coat
- Portion into small bowls. Top each serving of noodles with cucumber, chickpeas, carrots, snow peas, basil.
