Have you ever reminisced about the comforting dishes your mom used to whip up for the family during your childhood? I certainly have a few cherished ones that evoke delightful memories. Growing up, my mom embraced a vegetarian lifestyle shortly after my birth, so my nostalgic moments are filled with memories of delicious vegetarian creations. One of my all-time favorites is the Special K Loaf – a simple yet delectable dish that pairs perfectly with various vegetables, especially when served alongside a baked potato.

Vegetarian Twist on Classic Meatloaf

The Special K Loaf boasts a combination of cottage cheese, numerous eggs, and nut meal ingredients, making it a protein-packed option. While it may not precisely mimic the taste and texture of traditional meatloaf, many appreciate its similar qualities. It’s worth noting that this dish isn’t low in sodium, thanks to the cottage cheese and seasoning. Nevertheless, it is a fantastic protein source and a flavorful meat alternative. It’s also an exciting option for those seeking a new and creative culinary experience. If sodium is a concern, experimenting with different seasonings can help tailor the dish to your preferences.

Dairy-Free Special K Loaf Variation

Traditionally, the Special K Loaf recipe features plenty of eggs, cottage cheese, and dairy, making it a rich and cholesterol-laden choice. For those searching for a dairy-free and vegan alternative, consider trying out this modified recipe version.

Alternate Dairy-Free Special K Loaf

Ingredients

1/4 cup olive oil or dairy-free margarine

1 onion, diced

2-3 teaspoons vegetarian chicken seasoning, I like McKays chicken seasoning

1 teaspoon salt

4 Tablespoons flaxseed, ground

2 -16 oz packages firm or extra-firm tofu, drained well

2 cups dairy-free milk, unsweetened

8-9 cups Special K cereal

1 1/2 cups walnuts, ground

Directions:

  1. Sauté onion with dairy-free butter or olive oil until onions are transparent.
  2. In a large bowl, mash the tofu well. (Use a potato masher or your hands).
  3. Mix the sautéed onions with the tofu.
  4. Add the ground flaxseed to the dairy-free milk, stir, and let it sit for 5 minutes until thickened slightly
  5. Add the milk mixture, walnuts, broth powder, and salt to the tofu mixture and mix well.
  6. Fold in the Special K.
  7. Pour into a 9 X 13 greased dish, and bake at 350F for 50-60 minutes, uncovered, until it is a nice golden brown.
