Equipment

  • 1 Large pot
  • 1 blender or food processor

Ingredients

  • 2 cups Green Split peas
  • 6 cups water
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped apple
  • 1/2 TBSP minced ginger
  • 1 1/2 TBSP yellow curry powder
  • 1/2 TSP black pepper
  • 1/4 TSP ground red pepper
  • 2 TSP salt
  • 2 1/2 cups vegetable broth
  • 1 can coconut milk
  • 2 cups frozen peas
  • 1/4 cup lemon juice
  • 1 cup fresh cilantro

Instructions

  • Bring the split peas to a boil with the 6 cups of water. Do not add salt! Simmer for 30-40 minutes until tender. Drain off the excess water.
  • Meanwhile, prep and chop your ingredients.
  • Sauté onion, ginger, celery, and apple until softened, about 3 minutes. Add the frozen peas, curry powder, pepper, ground red pepper, salt, and broth. Simmer for 20 minutes. Turn the heat off.
  • In a blender, add coconut milk, vegetable mix, and cooked split peas. Blend until smooth. If your blender is small, you can divide it in half. 
  • Once all are blended, add them back into the pot and heat them to the desired temperature.
